A weekend of dinner parties

We spent the whole weekend pretty much with mum and dad eating great food! My kind of weekend.

Saturday evening mum and dad had a dinner party, which we invited ourselves along to. After mum told me it was Mexican theme I was begging for an invite. Margaritas and nachos, need I say more. We kick started the night with margaritas and weekday tales before sitting down for a Mexican style prawn cocktail, with spicy passata (kind of similar to a gazpacho) with a cucumber and tomato salsa and some salad leaves followed by a main course of a great bottle or two of red wine with nachos and chilli!! Amazing! But the Mexican feast didn't stop there, mum made a delicious key lime pie! I was in heaven! When can I book a holiday to Mexico? 

Unfortunately I was so busy indulging I didn't manage to get any pictures, but I hope you are able to imagine how good it was!

Sunday we returned the favour by inviting them to our abode. We didn't have a theme but we started off the evening with edamame beans (I'm obsessed) covered in a sweet chilli and salt sauce followed by a chorizo and chilli risotto with mushroom, peppers, plenty of garlic and tomato topped with rocket with a courgette, avocado, green lentil and sunflower seed salad. Yum yum yum!



The risotto recipe was an adaptation from a recipe we got from Gousto and the salad was a recipe from the 'Deliciously Ella' cookbook. 

All in all, I've had a fantastic few days full of delicious food and minimal exercise, but I guess that's what Mondays's are for!
